Instructions

Step 1: Prep Your Kimchi and Spread

Remove your kimchi from the jar and give it a rough chop into bite-sized pieces. Place the chopped kimchi into a clean kitchen towel or several layers of paper towel and squeeze firmly to remove excess liquid. This is a critical step — wet kimchi will steam your bread instead of letting it crisp. Set the drained kimchi aside. In a small bowl, combine the softened butter and mayonnaise and stir until smooth. This butter-mayo blend is the secret to an evenly golden, deeply crisp crust.
